Guatemala is a perfect country for coffee cultivation, with its varying micro-climates, volcanic soil, and mountainous terrain. Huehuetenango farms sit high in the mountains ranging from 5,000 – 6,500 feet (2,000masl). Dry, hot winds that come in from the mountains of Mexico’s Tehuantepec plain offer additional heat layers that protect Huehuetenango from frost. Because Huehuetenango is so remote and high up in the mountains, producers must often set up their own micro-mills. Fortunately, Huehuetenango has many rivers which producers use to facilitate the washing process.
Washed process coffee cherries are floated in water to ensure uniform ripeness and to remove any defective cherries. The coffee beans are then removed from their skins using a depulping machine and then to fermentation takes to remove any left over mucilage. After fermentation the beans are sun-dried until they reach optimal moisture levels.
