This coffee comes from producer Luis Anibel Calderon, who is somewhat of a local celebrity among Colombian coffee farmers. On this idyllic farm that sits high up in the mountains of Huila at 1,550masl they nurture over 20 rare and amazing coffee varieties. The rare Papayo variety is closely related to the Ethiopian Landrace variety. The Papayo cherries have a distinctive, elongated shape and a cup quality that is singular in its own right.
In the washed process method coffee cherries are floated and sorted to ensure consistent ripeness and remove any defective cherries. The coffee beans are then removed from their skins with depulping machines and moved to fermentation tanks to remove mucilage (remaining fruit). After fermentation the coffee is washed and dried until it reaches optimal moisture levels.
Washed process coffees tend to reflect the terroir of the growing region and allows the true character of the coffee to shine through.
